1. Open the file gta3.img (*/GTA San Andreas/models) with IMG tool
2. Replace olds bike.dff/bike.txd/choppa.ifp with news then rebuild archive.
3. Copy "main.scm" and "script.img" in "script" folder of your GTA San AHere is a skateboard modification that will replace the BMX within GTA San Andreas with that of a Skateboard.
